My family loves sleep. My husband gets up at the last possible second before having to get himself and our daughter ready, and she usually has to be woken up. I try to pretend I have to stay in bed with the sleeping baby. (Doesn’t usually work…) With all the sleeping going on, there doesn’t leave much time for a good breakfast. Charlotte was eating a whole wheat bagel in the car on her way to school most days and the empty calories weren’t our ideal for her breakfast. So we started making everyone a protein smoothie with flax seeds, almond butter, almond milk, banana and strawberry. She will down an entire mason jar if we let her and she is much happier when I go pick her up from school at lunchtime. (Usually with a little green juice for our car ride home.) Makes 2 large or 3 smallish portions.
2 cups frozen strawberries
1.5 cups unsweetened vanilla almond milk
2 tbsp soy vanilla protein powder
1 tbsp almond butter
2 tbsp ground flax seeds
Splash of apple juice
Blend and drink!
