I fell in love with this glaze. I got the recipe from America’s Test Kitchen and haven’t changed a thing. The orange is such a wonderful flavor for ham. It was different but oh-so-complimentary. And the black pepper and cinnamon just take the glaze over the top. Another wonderful aspect to the recipe is 1/3 of the glaze becomes a sauce served at the table so each guest can dial it up or down depending on taste.
1 spiral-sliced, bone-in half ham (7 to 10 pounds)
Foil or oven bag
3/4cup maple syrup
1/2cup orange marmalade (Trader Joes has a great one)
2tablespoons unsalted butter
1tablespoon Dijon mustard
1teaspoon ground black pepper
1/4teaspoon ground cinnamon
