Garlicy Chicken Lentil Soup

Mmmmm this soup. Garlic abound, tons of flavor and just wonderful. It reminds me of what I’d order at a deli in New York. It warms your soul. You should make it. Oh, and it’s so cheap! Chicken thighs and lentils will not break the bank in the least. I didn’t modify it from skinny taste, so I’ll ask you to head over there to get the full recipe. Image also from there cause I’m silly and we ate this very, very quickly.

 

Gather

1 lb dried lentils
12 oz (3) boneless skinless chicken thighs, fat trimmed
8 cups water
1 tbsp chicken Better than Bouillon
1 small onion
2 scallions
1/4 cup chopped cilantro
3 cloves garlic
1 medium ripe tomato
1 tsp garlic powder
1 tsp cumin
1/4 tsp oregano
1/4 tsp ground annato (or Spanish paprika, or even Sazon)
salt, to taste
