We really really liked these bad boys. Zucchini is such an amazing vegetable with tomato sauce and cheese. We love so many different ways of combining them. These boats are so pretty and easy to devour. Recipe modified from skinny taste.
1 1/4 cups marinara sauce
4 medium zucchini
1 tsp oil
1/2 small onion, finely diced
3 cloves garlic, minced
1 diced red bell pepper
14 oz bulk sausage
1/2 cup mozzarella, shredded
8 tsp Parmesan cheese, grated
Bring a medium pot to boil on the stove.
Meanwhile, scoop out flesh of zucchini into a bowl, leaving 1/4 in shell. Drain water from zucchini.
Place zucchini shells in boiling water for 2 minutes and drain on paper towels. Discard cooking water.
Pour 1/2 cup of marinara sauce into bottom of a 9 x 13 baking dish. Add shells.
In a large frying pan, cook onion and garlic until translucent, about 5 minutes. Add sausage, breaking up while cooking until browned. Add red bell pepper and cook another 3-4 minutes.
Pack filling into shells, pour sauce over filling and into the shell and top with mozzarella and Parmesan. Bake for 30 minutes, or until cheese is bubbly.
Enjoy with a side salad or rice or as is!
