This smoothie is really really really yummy. Charlotte drank both of ours. It tastes like a piña colada, minus the rum. They don’t recommend adding rum for pregnant ladies and toddlers I guess. We’ve been drinking one green smoothie for snack most days lately and it’s going quite well. I also feel better if she doesn’t eat a huge dinner, knowing she’s had so many vitamins and nutrients in the smoothie. If you want even more tropical awesomeness, add a 1/2 cup of frozen mango.
Pina Colada Tropical Green Smoothie
1 c light or regular coconut milk
2 c spinach
1 tsp vanilla
1 c frozen pineapple
1 banana, fresh or frozen
3 ice cubes
Put all ingredients in blender and pulse to break up ice and frozen pineapple, then blend on high for 1-2 min to ensure a smooth consistency. Pour into a fun glass with a fancy straw and enjoy!
