Quick and Tasty Banana Oatmeal Breakfast Cookies (Vegan and Gluten Free)

These work really well as oatmeal on the go, and it is very toddler friendly, although they may just try to eat the raisins out… Charlotte loves them as a quick car ride snack or breakfast. They have a lovely, subtle banana flavor and the cinnamon adds some complexity and spice. And they can be made gluten free and vegan to boot! The recipe was modified from a self.com recipe.

Quick and Tasty Banana Oatmeal Cookies

Ingredients:
3 ripe bananas
2 c. rolled oats (gluten free optional*)
1/3 c. applesauce
1 tsp. vanilla extract
1 tbsp honey (optional**)
1 tbsp. ground flax
1/2 c. raisins
1/8 c. sunflower seeds or slivered almonds
2 shakes of cinnamon

Directions:
Preheat oven to 350 degrees. Using a fork, mash the bananas in a bowl. Stir in oats, applesauce, raisins, honey, cinnamon, sunflower seeds, flax and vanilla extract. Mix batter well.

Drop by rounded spoonfuls onto a lined cookie sheet. Just to note, they don’t rise much at all, so shape them the way you’d like them to come out. Bake for 20 minutes.

Makes 24-30 cookies

*Oats are gluten free naturally, but may be processed in a facility with wheat, so if you have are cooking for someone with a gluten intolerance, purchase gluten free oats that are made in a separate facility.

**Honey is not technically vegan since it comes from an animal
