This smoothie was by far Charlotte’s favorite. She drank all of hers and she wanted mine as well. So basically, she just drank the majority of a cup of raw spinach, a banana and a cup of coconut milk. Yum.
Heavenly Coconut Banana Spinach Smoothie (lightly modified from the gracious pantry.)
1 cup of very firmly packed spinach
1 cup of coconut milk
1 tsp vanilla
1 frozen banana
A few ice cubes
1/4 cup unsweetened coconut flakes
Blend frozen bananas and coconut milk, then add remaining ingredients, blend and drink up!
